Bill - You may sell samples both days 4pm - 9pm Sunday and 11am - 4pm on Monday. There will be bands playing both days, so we will have traffic. You do your own vending and keep 100% of your revenues. You can sell whatever you like, the only thing we ask is that you keep the prices low. $3- $4 for a reasonable portion. I know there are teams that will be selling pulled pork sliders, chicken wings, ribs, sausage (hint to James) etc. |

| Roy is twisting my arm pretty hard(those two guys that showed up at my door a few minutes ago wearing black suits and carrying baseball bats) and the payouts are beyond AWESOME!!!, odds are quickly increasing that Tombstone will be able to make this event!!! |

When is meat inspection for extra categories? When can we start cooking? Reading rules it sounds like you have to cook all categories on grill or smoker so no crockpots or icecream makers???? In an extra category if you put something else in your display i.e. dip along with your sausage would that be okay (so can anything edible other than the contest ingrediant be plated?? thank you

Neil Inspection starts around 9 or 10 am Sunday morning, as soon as the health inspector gets there, in past years he has been early. You can start cooking as soon as you are through with the health inspector. For the Magic Ingredient and Dessert categories, there is no specification that the food must be prepared on the grill or smoker, just prepared on site (for desert 75% prepared on site). Open categories you can present however you like unless stated otherwise in the event rules.
