Bryan, The rules for CASI Chili is basically just meat and sauce. No specs or foreign materials like beans, veg, cheese or sour cream can be seen or identified in your turn in cup. Meat, usually beef, can be ground or cubed. You can find past international winning recipes at http://www.chili.org There should be rules there as well.
The Mystery Meat Homestyle Chili category is completely open to whatever you want to add to your chili.
Hope that helps.

Mr Wayne, a topic of discussion following last year's event was Chili Judging. Where do you plan to get your chili judges from this year and what experience do you expect to have at that table? I'm not all that interested in who may be judging a "mystery meat" event but the sanctioned CASI event is another matter. While the prize appears to be relatively negligible, the competition does go toward qualifying teams for the championship event in Texas in the Fall, that's the area of interest in this question. If this topic is not within your purvue perhaps the decision maker in that regard could address this matter for us. And by the way, a sincere THANKS for hosting.

Pat, as you can imagine finding trained CASI judges north of the line is a challenge. That being said we do have a group of judges that have done it for a long time. This contest has run since 1987 so we continue to call on the judges that have done it the longest. Long time CASI chill cook Fred Roycroft heads up the chill end of the contest and he deals with the chill judging extremely well. Fred walks the judges thru what to look for in chill. Appearance, taste and texture are all well covered during his judges orientation.
If there are any experienced CASI judges from the US that would like to come up and judge, we would love to have you!

We should have our website updated by the end of the week. You will be able to pay your fees online and check the boxes on the registration form for sign up. We will also be having a pre-order for Festival shirts if anyone would like one. Shirts will not be available for purchase at the Festival as we are a completely non profit society and we're not putting out cash to order a bunch that don't sell. All our cash goes back to the cooks.

Questions?
-On the sign-up page I see "ground cover required for all teams", is this for the pit, or for health department, and if for the health department what is the minimum coverage?
- Where do we send the completed form and check?

We were hoping to have our website updated by now but this week for sure!
Registration form and payment will be on our site. I will put a post on the Roll Call Forum as soon as our site is ready.
I guess the Barking Boys are definitely coming! Right on!
Tombstone BBQ, ground cover is for your pits to catch spillage. Health Dept does not have a regulation on this however they do not like carpeting. Rubber mats and plywood are ok.

Questions- since this will be our first time visiting Canada, and there will be two of us. What restrictions are we really looking at crossing the border, from what I can tell we are limited on meat. How do most of you guys get 70-80lbs across the border? next question, what about wood, all Ifound was it must be bark and insect free? any other things I need to know, or plan ahead for.(we do have our passports)
