OK, questions from the [event] n00b.

The registration form has this: "To those teams that enter the Sides: PACIFIC SEAFOOD will provide 2lbs. BACON; JUAREZ CANYON will provide 5lbs. POTATOES and 4lbs. GROUND CHUCK. Please use all items provided to serve the Judges and the Sponsors’ Tasting Table."

1) I take it that the part "Please use all items provided..." means that one must use the potatoes and ground beef provided by the sponsors for your turn-in, versus my own. Correct?

1a) And if I *gasp* don't use bacon at all? (i.e. Am I required to put bacon in something, since a sponsor provided it?)

2) "...the Sponsors' Tasting Table." Is there a set amount we're supposed to supply the sponsors, or just the extra we don't turn in for judging?

3) Any guess at what kind of potatoes will be provided? Regular, ol' Russets, most likely?

4) The chili and salsa are listed as People's Choice, but have a turn-in time of 11:30. Are we (the team) handing out samples for the People's Choice and it beings at 11:30, or do the chili and salsa get turned in somewhere and someone else handles getting it to the people?

5) And, finally, what time does Friday's Afternoon Early Load-in end, and Saturday Morning Load-in begin?

Anthony, Jim's response to your questions:

1)-No you can use your own potatoes and ground beef if you like.

1a)-The bacon provided to use is only if you want it, you don't have to take it.

2)-We have a lot of sponsors that won't get to sit and officially judge actual side category entries in the judging room on Saturday. That's why we have the sponsors tasting table outside of the judging room for non seated sponsors to get a taste of your creation. We would like you to use any extra product provided for those tables. We will have your team name posted and if you would like to name your dish that would be great too.

3)-No guessing, we will have Russets and Goldens to choose from or you can use whatever potatoes you would like to bring.

4)-The chili and salsa can be made off site and is judged by our LaSalle High School parents. It should be turned in between 11:15-11:30 am at the Flying Frog Saloon with your name and note; spicy or mild. We will have our coordinators take it from there and this event is also open to our guests as well.

5)-Friday load in starts at 10 am until dark with one keg taped for weary travelers that day. We will tap the second keg after the cooks meeting on Saturday. Saturday morning load in is from 7 am to 9 am.

Saturday sponsor night is just for our sponsors and invited guests. The sponsor night reception is what drives our event prize fund, and we hope teams will all take part to make it fun and memorable for our sponsors who donate cash and/or merchandise for the prize fund.

Anything Potato, Juarez Canyon Appetizer, Bud Best Burger and Dessert OVERALL SIDE CATEGORY $750 • GRAND CHAMPION $550 • RESERVE GRAND CHAMPION
(Must enter all 4 sides)


In addition Western Beverage will provide a prize to the top 3 winners in the burger category.

Also teams that enter all 4 side categories will receive a $25 rebate and be placed into a drawing for a FREE entry to next year's Juarez Canyon event.

If not using any or all donated items in your entry for the Judging Table, you can use the items to provide an entry to the Sponsor’s Tasting Table (does not need to be same as what you presented to judges).

Dessert can be made off-site. PLEASE NO STORE-BOUGHT ENTRIES.
Entries are not guaranteed to be served in order of arrival at turn in table. If your entry requires it remain at constant temperature (heat or cold) during judging process that source must be provided by you and must not interfere with showing and serving of the entry. Suggested source for heat would be hot pack like item and suggested source for cold would be dry ice.

Your entries will be judged by the special guests and sponsors of this event, not certified judges. Please keep in mind, the judging process takes longer than it normally would.



Anything Potato

Any fuel source is acceptable. Open garnish with sturdy entry tray/platter limited to 20” x 20”. No alcohol, live animals, fire or tippy presentations allowed.


Juarez Canyon Appetizer

Any fuel source is acceptable. Open garnish with sturdy entry tray/platter limited to 20” x 20”. No alcohol, live animals, fire or tippy presentations allowed.



Bud Best Burger

Standard competition fuel source should be primary fuel used. Open garnish with sturdy entry tray/platter limited to 20” x 20”. No alcohol, live animals, fire or tippy presentations allowed. Skewers, toothpicks are allowed but must be visible. While no Anheuser-Bush product is in your entry, Western Beverage has asked us to add some Bud props to this year's video so they can send it back to Anheuser-Bush.

Full size burgers: One whole for Appearance. Two cut in half for a total of three burgers required. Can be plated separately or together.
Slider size burgers: Six whole sliders. Can be plated separately or together.



Dessert

Dessert can be made off-site. PLEASE NO STORE-BOUGHT ENTRIES. No requirement on cooking devices. Open garnish with sturdy entry tray/platter limited to 20” x 20”. No alcohol, live animals, fire or tippy presentations allowed.

Jane & Jim,

MADDOGS' can only participate in two of the Saturday side categories as I will be breaking away to go pick up Christine as she flys into PDX Sat afternoon. However, I will accept the donated foodstuffs and use them to prepare dishes for the Tasting Table in support of the sponsors and guests. Given that, if the potatoes, bacon and beef might be available after arrival Friday, that would really help in that process. If not, we'll just deal with it. Pat

Do we have to reply and let anyone know we are cooking sad categories?
And does no alcohol mean no alcohol in the product at all?

You will be asked at site inspection what side categories you are doing.


No alcohol means that you can not serve it on the side with your entry. Alcohol can be used as an ingredient in the cooked product.
