Jane, sent in registration last week. Haven't seen Piggy D's added to tm list. Did you get it?

Did I miss it on the chicken wings. Can they be cooked any way, 6 pieces, and is it open garnish and container?

Papa Bad Bones Chicken Wing Challenge -

Any fuel source is allowed

Standard PNWBA competition rules apply regarding turn in box, garnish and number of pieces.

No pre cooking, marinating until after meat inspection.

Health Department permit information (see note below) was emailed to you this morning 7/6.



Organizer sent out wrong form, the correct form has just been sent to you via email.



Dear BBQ teams, we are very excited to have you for the 1st annual Swine and Spirits BBQ Festival in Redmond, OR! We'll be sending out setup information the week prior to the event. But first, we need to get health permits for teams that are sampling. 

If you are sampling for the event you must fill out the health permit. Samples are what brings the big crowds to the event so we thank every team who is sampling, as you are ensuring this event is a success! This is Central Oregon's introduction to the world of competitive BBQ. The more teams we have sampling, the better!  
 
The permit is attached and will take you less than 10 minutes to fill out. We will pay for the $80 fee if we receive the permit by next Wednesday (July 12). Please email the filled out document to lee@event-theory.com, or mail to Lee Perry 7211 N Mohawk Ave. Portland, OR 97203. 

If we don't receive the permit by the 12th you will have to send it direct to the Health Dept. and pay the fee. The fee doubles the week prior to the event and is $200 if you get it the day of the event. 

We have been working hard securing the permits, marketing the event and raising the prize money, please help us make this first year great by sampling to the public! If you have any questions please call Lee at 541-390-3214 or email lee@event-theory.com.

Another question for the chicken wing comp. Can the wings be marinated prior to the meat inspection?

Looking at the layout, I believe that shouldn't be a problem but let me check on it and I will get back to you.

Have you sent your HD application in, I didn't get it from you this weekend.

Just have to clarify, no dipping sauces can be included in the box, just the glaze and that's it, right?
